The Swamp Restaurant is hiring an experienced Assistant Kitchen Manager to oversee the daily operations of our establishment’s kitchen staff. As the Assistant Kitchen Manager, you will be responsible for overseeing food preparation, ordering supplies, scheduling shifts, and monitoring inventory levels. The Assistant Kitchen Manager will manage our kitchen staff and guide them to deliver quality food on time, among other responsibilities which include supervising the food prep and cooking, maintaining a fully-stocked kitchen inventory and complying with safety and cleanliness standards. In addition to being an excellent communicator, you should also demonstrate outstanding leadership and organizational abilities. To be successful in this role, the ideal candidate will have proven culinary and management experience. Ultimately, you will ensure all plates are properly cooked and served and our customers have a pleasant dining experience.

Responsibilities

• Manage kitchen staff and coordinate food orders
• Supervise food prep and cooking
• Schedule kitchen staff shifts
• Order food supplies and kitchen equipment, as needed
• Train kitchen staff on prep work and food plating techniques
• Store food products in compliance with safety practices (e.g. in refrigerators)
• Keep weekly and monthly cost reports
• Maintain sanitation and safety standards in the kitchen area

Skills

• Proven work experience as an Assistant Kitchen Manager, Restaurant Manager or Head Chef
• Hands-on experience with planning menus and ordering ingredients
• Knowledge of a wide range of recipes
• Familiarity with kitchen sanitation and safety regulations
• Excellent organizational skills
• Conflict management abilities
• Ability to manage a team in a fast-paced work environment
• Flexibility to work during evenings and weekends
• Certification from a culinary school or degree in Restaurant Management is a plus

Ability to commute/relocate:

• Gainesville, FL 32601: Reliably commute or planning to relocate before starting work (Preferred)

Just a few short years after closing our doors in 2020, we are excited to announce that The Swamp Restaurant is coming back to Gainesville! This August, The Swamp will re-open in a newly-constructed building that will fully capture the likeness and charm of the original building, complete with all of the things you remember most: the white picket fence, Sunday brunch on the front lawn, and a second floor event space perfect for 21st birthday parties, graduation celebrations, or sorority alumni weekends. We are elated to be continuing our legacy in our new location and can’t wait for you to be a part of our permanent history!
