ASSISTANT FOOD SERVICE DIRECTOR*

Reports to:* Food Service Director
New Position - Dedham Public Schools is now accepting applications for the position of Assistant Director of Food Services. Anticipated start date October 24, 2022

Responsibilities: *To help the Director of Food Services provide administrative and operational support for the department of food services. Providing the Dedham Public Schools with development and delivery for essential department functions. Ability to meet the requirements of administration and operations with district, local, state, and federal policies and regulations to ensure nutrition and financial integrity.

*
Essential Knowledge, Skills and Abilities:*

  • Expended knowledge of food service in K-12 programs, food service operations and maintenance, food procurement practices and food preparation and storage.
  • Assists in all areas of food production, with special care given to the quality and presentation of all meals served
  • Demonstrated competency in new recipe development, menu planning and execution of new scratch cooking processes.
  • performs HACCP duties and oversight of production and inventory management documentation as required for all schools.
  • Demonstrated competence in personnel management, including supervision Cafeteria managers, Assistants and all food service staff.
  • Knowledge of capital improvement, layout and design, maintenance, and food service operations efficiency needs.
  • Excellent communication skills, both written and verbal.
  • Exhibits leadership and professionalism among co-workers, school staff and the public.
  • Ability to work cooperatively with all stakeholders and with a diverse population.
  • Ability to work under pressure, time constraints and to plan and coordinate multiple projects at one time.
  • Proficient skills in MS Office Suite, Google Drive and Google Workspaces, and other Food Services related software programs
  • Ability to work in the food service operation as a Cafeteria Manager, Assistant as needed in production, planning, and service.
  • Ability to view operations and recommend methods for best workflow, and efficiency.
  • Assists in filling in daily production records and completes projects as assigned
  • Serves the students and staff in a friendly and caring manner, making sure serving stations are filled to accommodate customers and meet regulatory requirements
  • Allergen Certification required and supports the district requirements for allergens
  • Assists as needed all aspects of kitchen operations.
  • Assists as cashier with POS register and records record money and lunches on the computer, making sure each student has an account and updates provided to students with their account balances.
  • Reports to the Manager any problems or equipment issues.
  • Completes and is accountable to follow cash handling policies and procedures/deposits as assigned.
  • Assists in data gathering for financial and documentation reporting as required for MA DESE and the department.
  • Assists and cleans kitchen and cafeteria areas as needed
  • Assists in receiving deliveries and participates in monthly physical inventory and par stock documentation for placing orders as needed
  • Participates in development of food procurement practices, food samplings, and vendor relations that support innovation food operations for the district.
  • Works with the Director and staff members as a team to accomplish the daily duties and offers input from the students and staff with menu options, food preferences, and suggestions for workflow.
  • Works in close collaboration with the Director to maintain and enhance procedures for a smooth working department. Understands the importance of providing high quality customer service.
  • Performs other duties, as assigned, in this developing new role for Dedham Food Services

Duties and Responsibilities:*

  • Provide administrative and operational support to the Director of Food Services
  • Maintains and reports accurate information related to the operational function of the department
  • Assists with maintaining accurate site-based records of meals counts, production records, HACCP SOP records, cash reports and cash controls.
  • Supervised food production in all kitchens with the Director of Food Services
  • Oversees and assists with food procurement and ordering.
  • Assists in supervising inventory control measures.
  • Assists in the preparation of menu compliance, contracts and bid specifications.
  • Assists with planning and purchasing of new and replacement food service equipment
  • Assists the Director in training of staff on food handling and food preparation techniques, and analyze all menus by for school and student preferences
  • Follows the direction of the Director of Food Services and work collaboratively with the entire Food Service Team on department initiatives.
  • Trains staff in appropriate food handling and food preparation techniques.
  • Develops new recipes and menus to accommodate the use of USDA Foods, locally grown and work with vendors to develop menu options.
  • Flexibility in scheduling workdays and hours
  • Develop marketing and themed promotions at schools and offer innovative ways to enhance food quality to generate increased participation.
  • Develops relationships with local farms to establish expanding farm-to-school initiatives.
  • Assists in designing, setting up and implementing nutrition education and district wellness programs and initiatives.
  • Assists the Director in maintenance and data entry for the department nutrition analysis software.
  • Monitors student allergies with the Director to make accommodations, as needed
  • Attends food shows, conferences and is actively involved in our purchasing cooperative and professional organization meetings in MA and nationally
  • Coordinates staff coverage when needed; providing coverage at schools as needed.
  • Lift moderately heavy items and stand for sustained periods of time
  • Work efficiently during rush conditions.
  • Demonstrates ability to understand and carry out oral and written instructions
  • Plans and organize assigned work to meet deadlines, establishing efficiency in all assignments
  • Adheres to Servsafe safety standards, local BOH, and safe work practices especially in the handling and use of chemicals and blood-borne pathogens.
  • Maintains cooperative and productive working relationships through the courtesy and tact when dealing with others.
  • Ability to be certified and maintain Continuing Education requirements under USDA, State and local mandated school nutrition education requirements, safety laws, anti-choke, allergen certifications, as required.

Knowledge of:*

  • Methods and materials and equipment used in the preparation of large quantities of various food and nutrition services in K-12 with current knowledge of Federal and State Department of Child Nutrition Regulations.
  • Safety practices relating to the handling, storage and use of food products.
  • Cleaning and sanitation and health standards per state and local Food Code
  • Maintain and acquires up to date knowledge of modern food service and work methods, procedures and equipment use. Ability to develop menus, recipes, and food programs with a progressive approach to enhance student dining experiences.
  • Food safety and standard operating procedures for all aspects of food service, food allergies and food purchasing
  • Personnel management, mentoring and training experience.
  • Customer focused and committed to meeting the expectation and requirement for Dedham Public Schools and our students, families and stakeholders.

Qualifications of Education and Experience*

  • Minimum of three (3) years of experience in food service management in quantity food operations, including supervision of staff, menu/recipe and cooking ability, equipment operations, cost controls, USDA and DESE standards and requirements for school nutrition programs.
  • Bachelor’s degree in Food and Nutrition, Dietetics, Culinary, Institutional Food Service or related field desired; or an equivalent combination of education and experience.
  • SERV Safe certified (District will provide, as needed within 6 months of hire.)
  • MA Allergen certifies (District will provide, as needed within 6 months of hire.)
  • Maintenance of USDA and DESE required professional development including meeting annual CEU professional requirements.
  • SNA of MA and National membership Department funded.
  • Utilization of Food Services related software programs, POS, Health-e Pro, Google applications, and multiple district software programs.
