General Manager, Concessions

Job Summary

Strategic planning and senior level management for the BYU Concessions program, the University’s Farmer’s Market, Cougar Crunch and other manufactured items. The incumbent plans and administers the operations of concessions, directly oversees football and basketball concessions, concession marketing efforts (including signage), acts as a liaison between concessions and outside agencies (including Athletics, Stadium of Fire, and marketing agents). The general manager of concessions is responsible for concept development, research, refinement, and implementation including financial viability; as well as overseeing day-to-day operations.

Essential Functions

  • Direct the Operations of Concessions
  • Plans and administers the operation of 188 concessions locations throughout 7 facilities with full financial responsibility for an annual budget of $3M
  • Has total responsibility for all aspects of quality control, food, labor, and operating costs
  • Creates annual budget and monitors monthly performance to accomplish budgeted goals
  • Maintains and enhances good communications and working relationships with employees, customers, volunteer organizations, campus departments, and off-campus groups (i.e. Stadium of Fire, Farmer’s Market)
  • Resolves any escalated problems and customer complaints in a professional manner
  • Maintains highest levels of safety and sanitation to comply with all county, state, and federal standards and regulations
  • Oversees the production and marketing of items made by Concessions, such as Cougar Crunch
  • Creates and implements programs which enhance the guest experience and promote Dining Services (i.e. R.O.C. stand, a gluten-free stand, refillable Coke cups)
  • Selects and supervises off-campus vendors selling at University events (i.e. Costa Vida, food trucks)
  • Represents Dining Services department at various meetings, conferences, and conventions to facilitate networking and growth enhancement with other university campuses
  • Works closely with the Concession Manager in the hiring, firing, and training of staff
  • Final approval for personal development plans for concessions department
  • Approves the labor schedule for all employees working at BYU Concessions
  • Facility planning for upgrades, remodeling of concessions stands, addition of new locations and long-term concession direction for the University
  • Performs other duties as assigned
  • Manages Major Event (Football, Basketball, Stadium of Fire) Concessions
  • Facilitates the dining needs for all events in LaVell Edwards Stadium and major events in the Marriott Center
  • Directly plans concessions operations for football and basketball
  • Determines concession offerings and locations, including subcontractors
  • Oversees stocking, set-up, and strike of BYU concession stands
  • Determines labor needs
  • Supervises off-campus vendors
  • Ensures that everything is ready on time and is responsible for a positive fan dining experience
  • Forecasts sales for major events, and orders accordingly
  • Liaison with Athletics and Special Events
  • This position recommends to the Director of Dining Services royalty rates to be negotiated with the Athletic department
  • This position works directly with Athletic Director for special concession activities
  • Provides marketing support to the Athletic department, Continuing Education, and Stadium of Fire (i.e. $1 hot dog night)
  • Directs the sale of novelty and non-food items at Stadium of Fire
  • Additional Accountabilities
  • Represents Dining Services at the University Vehicle Accident Review Committee
  • Represents BYU at the National Association of Collegiate Concessionaires
  • Advises the Dining Services Director on safety issues
  • Supports other events, such as MTC Mission President Seminar, Catering, etc.
  • Serves on the campus Football Management Committee

Education/Experience

  • Minimum education/experience required:
    • Bachelor’s degree in related field and 4 years supervisory experience in concessions or related field, OR 8 years direct concessions experience.
  • Preferred:
    • Degree in hospitality management, recreation management, logistics, business or other applicable field
    • 5 years supervisory experience with a major concessions operation (i.e. Division 1, or professional sports) or related field

Skills, abilities, knowledge, licenses, certifications:

Required

  • Needs to have experience and understanding of collegiate concessions programs
  • Needs to understand financial budgets and have a proven ability to maintain food and wage costs
  • Needs to have interpersonal skills and knowledge of hospitality standards
  • Food Handler’s Permit
  • Serv-Safe Certification
  • Ability to work 18 hour days and 90 hour weeks during football and special events

Preferred

  • Active membership experience in NACC
  • Knowledge of Microsoft Office, especially Excel and Word
  • Experience with food management software, such as Eatec

Additional Comments

Major event management: 8 events per year; up to: 77 concessions locations per event; $350,000 per event; 65K attend per event. 18 events per year; up to: 22 concessions locations per event; $55,000 per event; 19k attend per event

Technology to transition from a cash to a cashless environment

Due to Concessions having such a small full-time staff, this position is responsible to pitch in at any time, on any issue in order to make all events successful. Working hours on major events can be up to 18 hours on the day of the event – it is not unusual to work 70 plus hours a week around major events

Physical Exam Details: Changes in weather conditions during events which can severely complicate preparing/stocking product and serving customers Working Conditions: Work outdoors and indoors, all kinds of conditions (weather, freezers, hot kitchen). Loud noises at events. Stress at peak times associated with events Hazards: Hot equipment, chemicals Physical Effort: Ability to handle stock, if necessary, up to 50 lbs. Standing, sitting and walking for long periods of time, including up and down stairs and ramps.

Approximate Starting Salary: $71,500 to $93,000 depending on qualifications and experience
