Overview:

The Director of F&B is responsible for assisting in the creation, oversight and success of the global Food and Beverage operations for Seminole Hard Rock Support Services and focused on HRI operations. This position at times includes all Seminole Gaming Administration properties, Hard Rock International domestic and international locations; to include managed, franchised and licensed casino, hotel, cafes, Rock Shop properties globally.


Responsibilities:
    • Ability to travel will make up a minimum of 60% to 80% of the years’ workload in this positon and may require more if deemed necessary.
    • Ability to travel via auto or airplane for extended periods of time.
    • Ability to travel, train and operate various food and beverage operations when there is open position or positon being trained for extended periods of time.
    • Collaborates with VP of Learning & Development and other functional and senior leaders to design, plan and implement a learning strategy to meet the organizational goals of the business.
    • Collaborates with Property F&B Leadership and property Presidents on performance of the food and beverage departments.
    • Maintains Training documents for all positions in F&B
    • Assists in the development of F&B talent across the globe as well leaders throughout all lines of business.
    • Ensure each new property has effective implementation of all brand Training standards and programs.
    • Researches best-in-class F&B Training programs for effectiveness within the organization.
    • Proactively design/re-design systems, processes and programs to eliminate obstacles.
    • Evaluate work procedures, review standards, identify methods for increasing efficiency or effectiveness, and respond proactively to any needs that have arisen.
    • Administers all Critical Paths for F&B openings of new hotel/casino locations, completing all tasks on time and on budget.
    • Delivers inspiring, crisp, measured learning programs for all levels and lines of business.
    • Communicates highly effectively with all levels of the organization both in written and spoken communication.
    • Monitor turnover, employee and guest engagement scores and other metrics to assist in developing learning outcomes to address gaps.
    • Partner with operational leaders to assess, design, deploy, measure and evaluate learning/ performance solutions and interventions.
Qualifications:

Experience:

    • Must have 7+ years’ experience in a high volume luxury food and beverage operations. At least 4 years of which are in a leadership role.
    • Must have a minimum of 2 years’ experience in a General Manager Role of a High Volume, Fine Dining Restaurant.
    • Possesses a career path of upward growth in F&B Front of the house positions from line level to leadership.
    • Mixology, Sommelier, and Front of the operations skill set is a requirement
    • Experience supporting in pre-opening operations in multiple cultures preferred.
    • Proven experience with financial models, P&Ls and other business and financial tools.
    • Proven experience in Seminole Gaming and or Hard Rock International preferred.
    • Excellent leadership skills with strong problem solving and influencing skills.
    • Ability to challenge the obvious based on sound reasoning.
    • Ability to be a self-starter.
    • Consultative skills and ability to work cross-functionally.
    • Strong communication and interpersonal skills, effective vendor and client management skills.
    • Ability to prioritize and multi-task in a global fast-pace environment.
    • Excellent project management skills and experience with proven success.
    • Strong attention to detail, systems and processes with a high level of business acumen.
    • Ability to move throughout the corporate office and all properties during visits (standing, walking, kneeling, and bending) for extended periods of time.
    • Ability to sit for extended periods of time.
    • Ability to make repeating movements of the arms, hands, and wrists.
    • Ability to occasionally, regularly, frequently move objects (lift, push, pull, balance, carry) up to 10 pounds.

Work Environment:

    • Duties and responsibilities are typically performed in live F&B environments. In these areas, you may be exposed to environmental factors including, but not limited to, second hand smoke and excessive noise.
    • While performing the duties of this job, the employee is frequently required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, talk or hear; and taste or smell. The employee must frequently lift and/or move up to 50 pounds. Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception and ability to adjust focus.
