Job description
The Director of Outlets will be overseeing daily food and beverage operations of all outlets including but not limited to Nobu, by Sensei, Bar and Lounge, In-Room Dining, and golf and tennis pavilions. This role will be in charge of creating and maintaining all standards set forth by the hotel. This position will be maintaining all front of house labor cost as well as beverage cost.
Responsibilities
- Select, train, evaluate, lead, motivate, coach, and discipline all employees, and Managers in the restaurants and bar to ensure that established cultural and core standards are met long-range strategic planning for outlet operation
- The ability to work closely with the Executive Chef and Sous Chefs to design an effective menu and wine list while ensuring excellent product quality at a fair price and attend regular operational meetings to ensure effective coordination and cooperation between departments
- Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control and cash control
- Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments
- Observe physical condition of facility and equipment in the outlet and make recommendations for corrections and improvements as needed
- Ensure compliance with health, safety, sanitation and alcohol awareness standards
- Leadership – Maintain a positive, upbeat role, promote and exemplify Company values and represents departmental objectives and interests to internal and external customers
- Customer Service – Follow up on complaints, questions, and concerns; respond to internal/external customer needs in a friendly, timely and efficient manner
- Teamwork - Develop and promote teamwork and cooperation among co-workers
- Safety – Comply with established safe work practices and attend to all safety-related training provided or made available by the Company
- Other duties as assigned
Qualifications

- 3+ years of restaurant/bar Management preferably in a hotel or luxury environment
- Exceptional knowledge of food and beverage (wine, beer and spirits)
- A leader who has excellent personal presentation and interpersonal skills, good problem-solving ability, engaging, and energetic
- Ability to work evenings, weekends and Holidays
- Requires reading, writing and oral proficiency in the English language- additional language skills encouraged
Required Licenses/Certifications
- Must be able to obtain any required food handing or alcohol serving certifications required by local or state agencies
