Madbush Falls, a unique new restaurant and hotel opening in Vermont next year, is looking for a culinary and operational leader. Located on an exquisite 19-acre property in Vermont’s Mad River Valley, Madbush Falls will be “Vermont’s Bike and Ski Basecamp”: 72-seat bar/restaurant, eco-lodge with a few dozen rooms, cabins, yurts and treehouses, bike coaching/guiding center, and a bike/ ski shop powered by the Outdoor Gear Exchange, the largest independent outdoor retailer in the Northeast. We are fully permitted and under construction.

Founded by Jonny Adler, cofounder of The Skinny Pancake (a restaurant group with 8 locations and one of Vermont’s largest restaurant buyers of local food), Madbush Falls is the culmination of years of planning, a dream team of Vermont’s outdoor, hospitality and real estate professionals, and over $6 million in new investment. We are reviving and transforming a classic 50’s era hotel (originally called The Madbush Alpine Chalet) into the cultural center and logistical basecamp for Vermont’s booming mountain and gravel biking scene. The property features a crystal clear waterfall and swim hole just steps from the hotel/restaurant, beautiful open grounds with a river running through it, and a swimming pond. It’s trailside to a world class mountain bike network. In the winter, we’re neighbors to Waitsfield’s largest XC ski center and 8 minutes from Sugarbush and Mad River Glen on the free shuttle route.

The brand new restaurant, designed in collaboration with Smith Buckley Architects (architects of Hotel Vermont and Hen of the Wood) includes a full commercial kitchen, full bar with large doors opening onto a wrap-around deck, and an open floor plan with stairs directly down into the Outdoor Gear Exchange so that guests can eat, drink and shop in a seamless experience. Broadly, we plan to offer 3 meals daily including:

  • strong coffee program and full bar
  • made-fresh wrapped-and-ready-to-go breakfast and lunch perfect for eating on the trail
  • classic apres menu
  • family style dinner service in keeping with European backcountry hut tradition.

The layout of the BOH/FOH and the specific style/format of the food service concept will be heavily influenced by the Executive Chef. If you get excited about shaping something new, if you love Vermont’s outdoor culture and culinary tradition, and if you are ready to help build a team and concept from scratch, this is the position for you.

Responsibilities include:

  • Conceptual Development: collaborating on BOH and FOH layout and design, menu planning, reviewing/adjusting budget and projections, honing staffing and service model.
  • Restaurant Startup: collaborating on equipment acquisitions and hiring a team (we will be heavily involved with recruiting), creating training protocol, designing a seasonally-appropriate local menu and offerings.
  • Ongoing Operations:
  • Managing staffing levels to meet margins and operational needs
  • Training new hires to consistent standards on guest service, portioning, presentation and health/safety/liquor compliance
  • Optimizing our menu to satisfy guests and meet margins and operational needs
  • Tracking/managing inventory for food and dry goods
  • Collaborating on fielding guest feedback
  • Ensuring compliance with health, life safety and liquor law

Requirements:

  • Strong culinary track record including minimum 3 years experience in BOH restaurant operations and menu creation and management
  • Minimum 3 years of HR management experience
  • Culinary degree and/or experience opening new restaurants preferred but not required

Compensation:

  • Salary: $60,000-$90,000 annually
  • Potential for substantial equity incentive to become a partner in the business ($250K+ in current value), including annual profit disbursements proportional to ownership
