Job Title: Kitchen and Culinary Steward
Starting Pay: $18/hr FULL TIME, with full benefits including 401K, 401K match, and opportunities for advancement.

Venue: The Durham Convention Center (DCC) is a 50,000-sf event venue located in the heart of thriving Durham, North Carolina. Hosting over 300 event per year, the venue serves at the host venues for regional and state conferences, meetings, banquets, weddings, various special events and public shows.

Job Summary:
  • The Kitchen and Culinary Steward is responsible for maintaining kitchen work areas, equipment, and utensils.
  • The general responsibilities of the position include those listed below, but Spectra may identify other responsibilities of the position.
  • These responsibilities may differ among accounts, depending on business necessities and client requirements.

Essential Job Functions:
  • Maintain a customer focus while performing duties.
  • Complete opening and closing checklists.
  • Monitor dish machine water temperature and chemical levels to ensure a sanitary wash cycle.
  • Load, run, and unload the dish machine.
  • Keep the dish machine clean and report any functional or mechanical problems to the kitchen manager immediately.
  • Ensure proper washing and storage of all dishes, glassware, and silverware, by hand or place them in a dishwashing machine.
  • Wash and store all tableware and kitchenware.
  • Wash pots and air dry them according to culinary procedures
  • Wash dishes and wipe dry, free of spots, before placing them in storage racks.
  • Handle tableware carefully to prevent breakage and loss.
  • Maintain adequate levels of clean tableware for the dining room and kitchen.
  • Assume 100% responsibility for the cleanliness of dishware and utensils.
  • Maintain adequate levels of dish detergents and cleaning supplies.
  • Ensure cleanliness and proper storage of all kitchen tools, including but not limited to: pots, pans, dry goods, beverages, paper goods, and other utensils.
  • Ensure work areas are clean at all times.
  • Cleans food preparation and production areas as required.
  • Wash work tables, walls, refrigerators, and meat blocks.
  • Empty garbage and clean cans when needed: remove trash and garbage to designated areas.
  • Sweep, mop, clean and scrub floors as instructed in Kitchen and all BOH service corridors.
  • Maintain mop buckets, dust pans, and brooms clean and without debris.
  • Maintain cleanliness and orderliness of storage areas by sweeping and mopping and organizing deliveries and breakdown boxes and removing to designated areas
  • Cleans equipment using specific chemicals to ensure sanitary standards
  • Maintain rear receiving dock, trash room, & mop areas and keep in a clean & orderly fashion
  • Keep track of and transfer supplies and equipment within and between storage and work areas such as a pantry, dry storage, beverage cooler, and dish room.
  • Assist culinary team with receiving and storing items as needed.
  • Comply with all HACCP policies and procedures.
  • Assist kitchen with plate preparation as necessary.
  • Polish flatware.
  • Close the kitchen and FOH services areas properly, following the closing checklist for kitchen stations.
  • Attend all food safety, food allergy, and food-borne illness in-service training as assigned.
  • Attend company-assigned training programs (classroom and virtual) as designated.
  • Report all accidents and injuries to the supervisor, manager, or GM in a timely manner.
  • Comply with all company safety and risk management policies and procedures.
  • Participate in regular safety meetings, safety training, and hazard assessments.
  • Perform or assist with other duties as assigned by the Executive Chef and/or Culinary Management team.
  • Maintain compost and surrounding areas.
  • Complete order forms for missing equipment and repairs.
  • Complete weekly and monthly inventories as prescribed.
  • Ensure proper closing procedures, at the end of each day, related to DCC equipment.

Knowledge, Skills, and Abilities:
  • Presents self in a highly professional manner to others and understands that honesty and ethics are essential.
  • Ability to work a flexible schedule; able and willing to work nights, weekends, and long hours.
  • Ability to stand for extended periods of time.
  • Ability to lift, bend, kneel, twist and stretch.
  • Ability to lift and move equipment up to 50 lbs.
  • Ability to follow a written schedule.

Education, Qualifications, and Experience:
  • High School diploma, GED, or equivalent experience preferred.
  • No experience is necessary, prior experience in a similar position is preferred.
