WHAT YOU'LL DO
- Break beef/lamb whole carcass into primal form.
- Practice safe food handling procedures at all times to USDA and BRC standards.
- Handle freight, organize coolers, operate electric meat saws, grinders, and other meat processing equipment.
- Cut, trim, and bone carcass sections or prime cuts to reduce to cooking cuts such as roasts, steaks, chops, stew cubes, and grinding meat.
- Portion and prepare meat in cooking form by cutting, trimming, boning, tying, and grinding meats.
- Reduce meats to cooking cuts by cutting and weighing steaks;preparing roasts, chops, stew cubes, and ground meat.
- Follow department procedures for preparing, storing, rotating, and stocking of product.
- Ensure product quality and freshness with proper rotation of product.
- Perform other duties as assigned.
WHAT WE’LL LOVE ABOUT YOU
- Concentration to pay close attention to what you are doing to avoid injury and waste of product.
- Manual dexterity to use sharp knives and meat cutting equipment as part of duties. Must have good hand control in order to make proper cuts of meat that are the right size.
- Physical stamina to be able to spend hours on their feet while cutting, packaging, or storing meat.
- Physical strength to lift and carry heavy boxes of meat, which often weigh up to 50 pounds and push/pull up to 400 lbs.
