The James Beard Foundation PLATFORM is a mission-centered showcase kitchen, event, dining and culinary demonstration space, as well as a vendor kiosk featuring a rotating calendar of visiting guest chefs. PLATFORM, which includes event space for up to 80 guests, is situated within the new Pier 57 Food Hall, home to 17 additional culinary kiosk vendors serving as an incubator for local small businesses and food entrepreneurs aligned with the Foundation’s mission of championing a standard of good food anchored in talent, equity, and sustainability.

Great Performances, which will operate PLATFORM, is a leading hospitality management company with a commitment to collaborative service, innovation and quality. The woman owned business serving New York City for over 40 years is as renowned for its events catering as for its food service in celebrated New York City cultural institutions, including Jazz at Lincoln Center, Brooklyn Museum, Brooklyn Academy of Music, The Apollo Theater and others. Great Performances is the nation’s first caterer to own and operate its own organic farm, Katchkie Farm, located in Kinderhook, NY. You are a reliable, hardworking professional with exceptional culinary skill, interest in cuisines of many culinary cultures and experience managing a large team. Your role will include an important focus on supporting and collaborating with an evolving roster of visiting guest chefs. You will oversee food production for both events and the kiosk, with responsibility for quality control, food and labor costs, employee management and communication with the corporate management team.

Responsibilities include, but are not limited to the following

  • Manage culinary staff and kitchen operations for a quick service concept, demonstration kitchen and culinary event space within a destination food hall
  • Manage all aspects food production to ensure high quality exceeding client expectations
  • Mentor and train culinary employees to follow established procedures
  • Work in a collaborative, team spirited approach with front of house and event programming teams, as well as James Beard Foundation and Great Performances management
  • Plan and direct food preparation and presentation to elevate food quality
  • Ability to scratch and batch cook and create production sheets for the proper yield
  • Monitors safety standards of kitchen and food items assuring freshness and quality of menu items
  • Monitors employees maintain NYC Department of Health guidelines
  • Perform administrative tasks, maintaining food and equipment supplies
  • Place orders thru company computer program Caterxpert
  • Process all invoices thru company computer program Plate IQ
  • Supervise and lead kitchen staff to develop with the EC systems and manage the team to execute in operations
  • Ability to be “hands on” team player by being involved in daily preparation and support of staff
  • Expediting and inspecting orders to ensure food quality is to standard
  • Troubleshoot any issues as they arise working with management team to support all operations

Knowledge, Experience and Criteria

  • 5 – 6 years prior culinary management experience
  • Culinary degree preferred
  • Knowledge of NYC Health Department guidelines, including safe temperature at which ingredients must be kept and to which food must be prepared to avoid foodborne illness
  • New York City Food Handler’s Certificate will be required within one month of employment
  • Experience working in a fast paced environment
  • Calm and professional demeanor to work in a high-stress, fast paced environment
  • Ability to work a flexible schedule including nights and weekends
  • Must be able to lift up to 50 lbs. and stand for at least 8 hours
  • Ability to execute all duties and responsibilities in a safe and timely manner
  • Perform other duties assigned to ensure overall operational success
