• Work as part of a team with other Sushi Chefs and Chef de Cuisine to create a rich sushi menu with varied ingredients and flavors and complementary thematically appropriate dishes.
• Create and prepare various types of sushi including maki, nigiri, and sashimi with both cooked and raw ingredients.
• Prepare appetizers, soups and salads along with other beverages and dishes.
• Plate and decorate dishes for customers, providing utensils, sides and other supplies.
• Follow recipes and team processes to ensure meeting time and quality standards.
• Maintain a friendly, cheerful personality, treating our guests kindly - welcoming and acknowledging them. Make reasonable accommodations and answer any questions.
• Ensure food safety standards are always maintained. Including proper storage of all kitchen items, use of PPE, and the maintaining of proper pH of rice, among others.
• Ensure correct temperatures are always met and maintained.
• Follow all cleaning procedures and ensure best hygiene practices, including thoroughly cleaning your space at the end of your shift.
• Assist with cleaning, organization, and sanitation of kitchen, walk-in cooler and storage areas.
• Collaborate effectively and respectfully with all team members.
• Proactively communicate product run-outs, equipment issues, and quality service problems to effectively reduce impact.
• Reduce inventory waste to the best of your ability.

• Carry out any other duties and responsibilities as assigned.

• 2+ years of work in sushi production in a hospitality or restaurant environment.
• The ability to demonstrate exceptional customer service skills.
• Always maintains a warm and friendly demeanor.
• Strong communication skills.
• Ability to work well under pressure.
• Talented in the art of sushi making, able to make changes quickly and think fast.
• Sound knowledge of food safety regulations.
• This position will spend 100% of the time standing.
• Ability to work flexible hours as required including nights, weekends, and holidays.
• Must be able to lift up to 15 pounds.

• Valid Food Handlers license
• NYC Food Protection Course Certification (preferred)
