Job Overview:
Responsible for all FOH aspects of the food and beverage within The Water Valley Company Eateries portfolio. Helps direct, implements, and maintains a service and management philosophy that serves as a guide to respective staff. Ability to receive direction and act upon it. Has a minimum of 2 years management experience. Possess technical ability and knowledge to give direction to staff and act on it. Must be able to lead, inspire & mentor all FOH staff in all aspects of daily operations.
ESSENTIAL JOB FUNCTIONS
  • Knowledge of activities and amenities of Raindance and Pelican Lakes Golf Club
  • Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.
  • Maintain complete knowledge of correct maintenance and use of equipment. Use equipment only as intended.
  • Anticipate guests’ needs, respond promptly, and acknowledge all guests, however busy and whatever time of day.
  • Always maintain positive guest & staff relations.
  • Help Resolve guest complaints promptly, ensuring guest satisfaction.
  • Monitor and maintain cleanliness, sanitation, and organization of assigned work areas. Ensure proper preventative maintenance, cost control and breakage prevention.
  • Help with training of FOH staff, supervisory and line level staff on steps of service and ensure all associates are maintaining the highest levels of service in all FOH operations.
  • Maintain complete knowledge of all menu items, liquor brands, beers, and non-alcoholic selections available in the outlets.
  • Help with Interviewing and Hiring
  • Void & Discount transaction control on daily shifts
  • Conducts daily pre-shifts / uniform checks / tastings
  • Proper training of cash handling and shift reporting
  • Ensuring proper certifications (TIPS, ServSafe, Food Handlers Card) for FOH staff.
  • Upholds standards of daily opening/closing procedures
  • Tabletop, Music and Lighting program per daily shift
  • Inspect room, table/set-ups; check for cleanliness, neatness; rectify deficiencies with respective personnel.
  • Ensure associates are familiar with all resort services/features and local attractions/activities to respond to guest inquiries accurately.
  • Ensure that associates maintain a thorough understanding of the restaurant menu and beverage menu through tests and other learning techniques.
  • Constantly monitor FOH staff performance in all phases of service and job functions, ensuring that all procedures are carried out to FOH departmental standards; rectify any deficiencies with respective personnel.
  • Proper coaching and counseling on matters for all hourly staff
  • Ensure that assigned staff reports to work on time for scheduled shifts; document any late or absent employees and ensure F&B Manager is apprised.
  • Control labor costs through proper scheduling, up to and including, adjusting schedules based on business levels to exceed guest expectations.
  • Settle checks in the P.O.S. system according to specifications. Process payment of guest checks in accordance with accounting requirements and maintain accountability for all financial transactions.
  • Train and maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
  • Able and willing to perform other tasks to maintain productive and successful work environment.
  • Meet with the F&B Manager for weekly meeting for all aspects of operations.
  • Proper ordering of all FOH needed items.
  • Build wine, cocktail, and beer programs that appeals to patrons and is profitable.
  • Monthly inventory and reconciliation of numbers to ensure profitability.
  • Maintains a well-polished appearance following all grooming standards and dress codes.
  • Conflict resolution and crisis management for any emergency, complaint, or error.
  • Carryout office related tasks such as, but not limited to daily paperwork, interoffice communication, assisting F&B Manager with any other duties as reasonably requested.
  • Assist in payroll reconciliation.
