BlueSun has a great opportunity for a temporary, full-time Baker with Oregon State University Housing and Dining Services in Corvallis, OR.

Baker's Wage: $16.71 - $24.82 per hour.

Duties:
  • 75% Baking – Gathers materials and prepares baked goods according to standardized recipes described on the production work schedule; weighs, measures, mixes, kneads, molds, and brings the dough to proper lightness, bakes specialty bread, rolls, buns, biscuits, bars, cookies, pastries, cakes, and pies; measures and mixes the batter for cakes, cheesecakes, custards, puff pastries, cookies, pies, and other desserts; performs finish work on pastries by glazing rolls and donuts, icing and decorating cakes and cookies, and fluting pie shells; counts and prepares baked good for distribution to food service units; uses bakery equipment such as a variety of ovens and proofers, mixers, choppers, steam-jacket kettle, and pastry cutter; adjusts the scale of recipes for larger or smaller quantities and makes recipe changes when necessary to obtain a better quality product. Produces specialty Baked goods according to the direction of chefs. Performs some baking in a display cooking environment. Works with Culinary Management (Sous Chef & Chef) to ensure all guests’ needs are met.
  • 5% Actively participates in menu meetings to establish quantities of foods to order, recipe evaluation, and to encourage open ongoing communication between management and other staff members. Records daily production records to help in forecasting. Also participates in requisitioning and record keeping. Maintains adequate products and supplies for baking operations; requests, through the supervisor, bakery products that need to be ordered; checks food products received to assure they meet the type, quantity, and quality specified on order. Assists the supervisor by keeping records of bakery ingredients used, production volume, distribution, and sales of baked goods. Assists the supervisor in maintaining production volume and distribution schedules as well as a production schedule determined by orders from the units, records and communicates changes when recipes are altered; counts equipment such as kitchen utensils for inventory. Assists in monthly inventory counting. Participates with the supervisor in the selection and development of recipes and production methods for baked goods; places leftovers in proper containers for storage; washes and cleans utensils and equipment used in the bakery shop; washes and scrubs pots and pans; cleans sinks, ovens, countertops, tables, coolers, walls, and floors. All new recipes are turned into the Chef or General Manager for entry into the Menu Management System to assess cost-effectiveness before being produced.
  • 15% Train, assign, and monitor work of students and/or food service staff and workers in baking methods and procedures as instructed by supervisor; may train, plan and direct the work of students or other employees. There is a need to consistently demonstrate sound judgment to support the established professional standards, policies, and procedures of the work unit, department, and university.
  • 5% Miscellaneous - Use a computer to check work schedule, complete timesheets, complete online forms, and check employer-provided email. Other duties as assigned could include cash handling.

Qualifications:
  • One year of experience as a Baker in an institution or commercial bakery.
  • Effective communication skills include the ability to understand and convey written or spoken instructions.
  • Experience following food safety & sanitation process/procedures. Competent knife handling skills.
  • Basic knowledge of a computer such as e-mail, accessing web-based programs, etc.
  • Requires a valid Food Handler’s certificate within 30 days of employment. Must maintain.
  • certification throughout service with UHDS.
  • Must be able to pass a criminal background check and other pre-employment screening.
