POSITION SUMMARY

This position is responsible for organizing, managing and directing the banquet department and staff to provide high quality banquet/catering functions.

ESSENTIAL DUTIES AND RESPONSIBILITIES

Essential Duties:

1. Coordinate the delivery of all food and beverage for functions held in the Hotel and all details pertaining to functions being held in all banquet and meeting rooms.

2. Applies safety fundamentals in all areas of health inspection requirements and operation, including proper use of utensils and equipment.

3. Achievement of budgeted food sales, beverage sales and labor costs.

4. Schedule team members and manage service for multiple functions concurrently.

Job Duties and Responsibilities:

· Insures all standards of operations for the department are in place and working effectively.
· Conducts department audits and insures compliance. Insures franchise inspection requirements are met.
· Organizes catering worksheets, records changes from daily change sheets and executes room set-ups
accordingly.
· Conducts regular equipment inventories. Maintains equipment in working order.
· Schedules cleaning and repairs of function space and equipment.
· Conducts pre-function meetings with meeting planners and hotel service personnel; reviews menus, service details and customer requirements.
· Performs function room inspections, verifying set-ups and requirements, making adjustments when
necessary.
· Controls labor costs, including payroll, tip distribution, beverage control, preparation and signing of banquet checks.
· Maintains and controls liquor, food and beverage costs related to the Banquet Department.
· Achieve maximum profitability and over-all success by controlling costs and quality of service.
· Participation and input towards F & B Marketing activities.
· Help in preparation of forecast and actual budget function sheets.
· Has working knowledge of kitchen operations such as food handling and preparation, sanitation, safety, maintenance of equipment etc.

SUPERVISORY RESPONSIBILITIES

This position directly oversees and supervises all positions of the hotel staff. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Supervisory responsibilities include, but are not
limited to performing the following duties: hiring, assigning work, orientation, training and development, evaluating performance, elevating compensation, rewarding performance, mentoring, approving time off and scheduling,
resolving complaints, disciplinary action and associate separations, effective staffing procedures, awareness of and response to associate morale problems, and supervising workload during shifts.

EDUCATION AND/OR EXPERIENCE

Education and/or Experience:
A minimum of a high school diploma or general education degree (GED) plus two years related banquet/catering experience.

Language Skills:
Must be able to read, write and speak English. Must be able to read and interpret simple and complex documents, reports, manuals and correspondence. Must be able to write simple and complex documents, reports, and correspondence. Must be able to speak effectively with clear speech to individuals and groups. Multilingual skills helpful but not required.

Mathematical Skills:
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.

Computer Skills:
Has advanced basic computer job skills including logging on to systems, ability to communicate by email, ability to compose documents, enter database information, create presentations, download forms, and preserve/backup
important data.

Reasoning Ability:
Must be able to apply common-sense logic and understanding to carry out instructions provided in written and/or oral form. Must have the ability to solve problems involving several variables in given situations and interpret a
variety of instructions provided in written and/or oral form. Must be able to demonstrate effective interpersonal skills, sound judgment and decision-making.
