Role and Responsibilities
The Pastry Sous Chef is responsible for ordering kitchen supplies and producing all forms of baked foods in line with the discretion of the management. The Pastry Sous Chef will oversee activities of the kitchen staff while at the work place and organizing the kitchen to ensure it meets up to its optimum expectations.
Keep the bakery organized
Supervise kitchen staff activities
Ability to manage finances including reading and understanding P&L statements and General Ledgers
Prepare deserts and bakery items for catering menus
Decorate baked foods and cakes in accordance with the organizations requirements
Wedding Cakes
Chocolate Molding
Sugar Molding
Placing order for inventory and inventory control
Responsible for Health inspections and grade for the Bakery
Develop new menu ideas with Chef Team
Prepare and execute invoicing per Rocky Top location
Prepare weekly schedule for bakery staff
Strictly adhere to preparation standards for Rocky Top Catering
Qualifications and Education Requirements
2+ years work experience in pastry
Good knowledge of ingredients useful for pastry making
Ability to direct and supervise other members of staff in the kitchen to ensure compliance with organization standards
Good leadership skills, including good interaction with subordinates and superiors
Good sense of judgement required for accurate task assignment to subordinates
Must have clean driving record and reliable transportation
Keep up with culinary trends
Keep up with cooking best practices
