We are looking for an ambitious and passionate dynamic, inspirational culinary leader to join our Kitchen in Metro Detroit

What you’ll do:
You must be passionate about food, ingredients, seasonality and have the drive and ambitions to lead, recruit and train the kitchen team. You will be the driving force behind the food offering making sure it is seasonal, relevant and appealing to our Premium Airline Clients. You will have an in-depth health and safety knowledge ensuring that standards are kept in line with HACCP. You have a clear understanding of what it takes to run a successful, financially viable business and be an inspirational leader to the brigade.

A day as an Executive Chef:
  • Experience training food prep employees
  • Ability to instill safety and sanitation habits in all employees.
  • Teach employees the importance of consistency in preparation and presentation
  • Thorough knowledge of food handling and preparation techniques
  • Ensure that level of quality, portion control, and plate presentation is adhered to consistently
  • Coach and counsel employees to reflect DO&CO service standards and procedures
  • Monitor all duty schedules in the kitchen operation
  • Frequently tour through all Kitchens, Stores and other food production facilities ensuring the highest possible hygiene and maintenance standards
  • Control the food cost by reviewing and approving all store requisitions and direct purchases and minimize wastage
  • Ensure HACCP standards are implemented and follow the appropriate hygiene standards
Who are you?

  • Bachelor's degree or related culinary degree
  • 4+ years of industry & culinary management experience
  • Manage in a diverse environment with focus on client and customer services
  • Experience with control food & labor cost, demonstration cooking, menu development and pricing and development of culinary team preferred.
  • P&L accountability and/or contract-managed service experience is desirable.
